When does it reach 210 idling at a light or on the highway?
What size engine?
Have you checked the timing not just at idle also the maximum advance?
Have you flushed the system?

Try a 160 deg. thermostat, it's what I run on an A+ 1275, with three drilled 1/8" holes.
