I finally found the answer. My threaded nut of the sensor is 5/8 - 18 UNF.

What was confusing me was I could not find a nut to fit the sensor nut. The reason was the 1st thread was slightly banged up by the PO.
It just so happened that I had a 5/8 - 18unf die and what was really fortunate was; it was the one with a split in the die. I needed the split kind to fit over the bulb sensor to get to the nut.

This only took a year.

I have 5/8 X 18 which makes it UNF.

All you ever wanted to know about UNC and UNF threads.
https://en.wikipedia.org/wiki/Unified_Thread_Standard

Pipe threads are different. The threaded portion is tapered so that as you tighten the joint, the gap between the pipe threads and the fitting threads continue to close up until there is no space and it won't (shouldn't) leak even gases.

Thermostat stud holes are 5/16 UNC. Temp sensor hole is 5/8 UNC.

I am assuming you are talking about the hole for the temp sensor. I believe this is a straight thread. I don't recall the thread, I would have to measure it again (I had reworked one some time ago).
